For the sauce :
- 1 pack of Pek Bouquet manti
- 3 diced tomatoes
- 2 cloves of garlic
- 1/3 bunch of fresh basil
- 1/2 cube sugar
- 1 tbsp of apple cider vinegar
- 1 tsp salt
- Pepper (as much as you wish)
- 2 tbsp of olive oil
Boil your Pek Bouquet Manti in plenty of water, without waiting for them to defrost. While the manti boils at one side, cook the diced fresh tomatoes with garlic and olive oil in a large pan, until fragrant. Add 1/2 cube sugar and 1 tbsp of apple cider vinegar into the pan right before the tomatoes are completely cooked and have lost their acidity. After this step, cook for a little while more and add your manti into the sauce. Don’t forget to keep a ladle of manti water for later use. After the sauce completely coats the mantis and everything’s completely blended, add the manti water into the pan, and cook for a while more until the sauce completely thickens up. Before serving add a bunch of fresh basil on top and voila! A different alternative to the classic garlicky yogurt sauce topped with red pepper infused melted butter, this recipe is perfect for modernizing a traditional recipe, while bringing a sense of innovation and color to the table!
